Roasted Acorn Squash with Apple Center

Acorn squash is a perfect fall side dish and the delicious baked apple center just adds to the goodness.  This is pretty easy to prepare while also making an attractive addition to your table!

You’ll need:

    • 1/2 acorn squash ( I saved the other half for a different dish, but you could easily double this!)
    • 1 medium apple, cored and roughly chopped
    • 1 1/2 tablespoons melted Earth Balance butter substitute or butter
    • 3 tablespoons honey
    • Cinnamon, ginger, nutmeg

Preheat the oven to 350 degrees.

Slice acorn squash in half and scoop out the inside and seeds.  You can roast them separately for a good crunchy snack!  Place half acorn squash face down in glass pan and pour a few tablespoons of water into the pan – enough to cover the bottom.  Bake for 30 minutes.

While squash is baking, mix butter and honey together then pour over apples.  Sprinkle with cinnamon, ginger, and nutmeg then allow to soak.

Once acorn squash half has baked for 30 minutes, remove from oven.  Flip the squash and fill with apple mixture.  Return to oven and bake 35 more minutes until squash is soft and apples are brown.  Serve and enjoy!
